Usually, when you run into a banana your kart will spin out of control, but if you go in reverse right before you lose control, you can stay straight. If a music note appears above your characters head, you will know you did this right. This will not work on battle mode.
One of the funnest things about Mario Kart 64 is the battle mode. The goal in battle mode is to knock out every other player and stay in the longest.
